On this last day of the challenge, we want to thank you for joining. Also, we would like you to treat yourself on something nice and celebrate the good things in your life. Make a list of what you are happy with, what gives you energy and a sense of lightness.
In case you have trouble finding something that makes you happy, treat yourself with these pancakes:
Fig & walnut pancakes
6 tbsp of oats
1,5 – 2 dried figs, chopped
2 walnuts, chopped
a pinch of cinnamon
a little oil for baking
Mash the banana and mix in the oats and cinnamon while doing so. Then add the chopped figs and walnuts. Heat some oil in the pan and form a small ball from the batter in the palm of your hand. Flatten the ball a little and then gently place it in the pan. You can flatten it a little bit and make the shape more round with a fork or a spatula. My pancakes had a diameter of 12-14 cm. Repeat this a few times so you bake several pancakes at once. After some minutes, you can flip them over. A spatula is recommended because they break easily at this stage. When they do break, you can push them together again. When they are golden brown on both sides, they are ready to eat. They taste delicious with some grated coconut, maple syrup and berries.
